We’ll begin with a Picadillo Empanada, filled with seasoned beef and cheese, golden, savory, and just the right start to the night.

For the main, Chicken Enchiladas take center stage, served with Mexican rice, pico de gallo, guacamole, and sour cream. It’s a vibrant, satisfying plate, layered, festive, and meant to be enjoyed slowly, with good company and a second sip close by.

And then, Tres Leches for dessert, light, sweet, and indulgent in all the right ways. A classic finish that never disappoints.

This is what the deck was made for.

On April 29th, we’re firing up the grill for a night that’s all about smoky, sweet, and straight-off-the-flame flavor. It starts light with a chilled carrot gazpacho finished with basil oil, then moves into grilled honey glazed chicken kabobs and steak with onions, simple, satisfying, and just right for an evening outside.

On the side, whipped garlic mashed potatoes and roasted corn (because you can’t not), and a chocolate banana bread pudding to close things out, warm, rich, and worth saving room for.

Not in the mood for kebabs? A roasted chicken breast with jasmine rice, roasted Brussels, and orange butter sauce will be available as well.

Some nights are about leaning back a little and letting dinner be easy.

On April 20th, we’re heading to the deck for a casual Italian night, good food, familiar flavors, and the kind of meal that feels like it’s meant to be shared.

We’ll start with crispy, cheesy arancini with marinara (always a good idea), then move into a rich short rib bolognese over hand-cut pasta, finished with shaved parmesan and grilled garlic bread. And yes, tiramisu to close, because there’s really no other way to end a night like this.

Chef Ralph took a look at the recent survey and, let’s just say… this one might feel familiar in the best way. You asked, he’s cooking.

Not in a pasta mood? There will also be a roasted chicken breast with jasmine rice, roasted Brussels, and orange butter sauce available.

This is one of those dinners that feels like St. Croix on a plate.

On April 14th, we’re leaning into the kind of meal that doesn’t need much fuss, just good ingredients, handled well. It starts with crab puffs (because why not start strong), then moves into a roasted tomato basil fresh catch with lemon jasmine rice and grilled zucchini; bright, clean, and exactly what you want after a long day.

Dessert brings it home with a soursop panna cotta, cool, silky, and just a little unexpected.

Not in a fish mood? We’ve got you. Chef Ralph is offering a roasted chicken breast with jasmine rice, roasted Brussels, and orange butter sauce, rich, balanced, and absolutely not a second choice.

This is an easy night to say yes to. Bring a friend, pull a table together, and let dinner take care of itself.

Some dinners feel a little more special and this is one of them.

On April 7th, Chef Ralph steps forward with a showcase menu that’s layered, thoughtful, and full of bright, unexpected moments. From lobster toast with citrus and chili oil to a local catch crudo touched with passion fruit and coconut, each course builds with intention.

There’s depth here too, creamy chicken and wild rice soup with truffle mushrooms, a striking cauliflower trio salad, and a beautifully prepared parmesan-crusted petit filet served with yucca frites and beurre rouge.

And just when you think it couldn’t go further, dessert arrives, a matcha ube éclair that feels like a final, playful note.

This is a dinner to enjoy from start to finish.

Easter Sunday feels better by the sea and even better around a good table.

On April 5th, we’re bringing together a brunch that’s bright, generous, and just the right mix of relaxed and special. Lemon poppy seed pancakes, bagels and lox, a savory asparagus and goat cheese quiche, and a classic leg of lamb lead the way, with fresh fruit, berry parfaits, and banana cake rounding things out.

It’s the kind of spread that invites you to settle in, catch up with friends, and maybe go back for “just one more” of something.

Guests are always welcome, so bring your people and make a morning of it.

April has a way of shifting the energy at the Club.

We move gently from season to season, welcoming spring, celebrating Easter, and beginning to see a few familiar faces head north while new ones arrive. To our snow birds, we wish you safe travels and a smooth journey home, you’ll be missed. And to our summer members, welcome, we’re so glad you’re here.

The month begins with Easter Sunday Brunch on April 5th, one of our favorite gatherings of the year. It’s a table meant for sharing, family, friends, and a little extra time together. We’re looking forward to seeing you all there.

Just a couple of days later, on April 7th, Chef Ralph presents a Chef’s Showcase, a five-course tasting menu and one of the standout dining experiences of the month. Thoughtful, layered, and meant to be enjoyed from start to finish, it’s an evening built around the pleasure of a well-paced meal.

Throughout the month, we’ll keep things moving with a mix of easy and elevated evenings, Fresh Catch Dinner on April 14th, a return to bright, coastal flavors, and Italian Night on the Deck on April 21st, inspired by the recent member survey (yes, we’re listening… and cooking accordingly).

We close the month on the deck with Grilled Kabob Night on April 28th, a relaxed evening by the water as we settle into the rhythm of the season ahead.
